This recipe comes courtesy of a school friend, Eira Hale, who now has her own cake business in Warwickshire, Cake That and Party . It is a fantastic recipe for celebration cakes.
- 350g Unsalted butter
- 350g Caster sugar
- 350g Self raising flour
- 175g plain flour
- 6 eggs
- 1 tsp vanilla extract
This is for an 8 inch (20cm) round cake.
First, cream the butter and sugar together.
Add the Vanilla extract, and mix again.
Then add the eggs, one by one, and mix well to combine. This will look a little bit like it is splitting, but it comes together once you add the flour.
Add the plain and self raising flour, and mix well.
Spoon the mix into a prepared 20cm cake tin – I find these cake tin liners really useful.
Bake for about 2 hours in a preheated 160C oven until a skewer comes out clean when inserted. Test the cake from about 10 minutes before the 2 hours is up.
