Gluten and Dairy Free Apple, Raisin and Sultana Bake


At this time of year, I’m always on the lookout for recipes which use up some of the cooking apples from the tree in my garden.  I saw something similar to this online, and came up with this to meet the idea of what I wanted to bake. Gluten Free and Dairy Free, this was perfect to take for the mums at our local playgroup the other week!

  • 4 Cooking Apples (peeled, cored and diced)
  • 250g Block Margarine or Unsalted Butter (I used Margarine this time but either will work)
  • 120ml Water
  • 110g Muscovado Sugar
  • 110g Light Soft Brown Sugar
  • 125g Raisins
  • 125g Sultanas
  • 400g Gluten Free Plain Flour
  • 2tsp Gluten-free Baking Powder
  • 1tsp Ground mixed spice
  • 1tsp Ground Cinnamon
  • 4 Beaten Eggs

Place the Apple, Margarine, Water, Muscovado Sugar and Light Soft Brown Sugar into a microwaveable bowl.

Cook on High in your microwave for 10 minutes, and then mash the apple as much as you can with a potato masher.

Add the Raisins and Sultanas, stir to combine, and cook on high again in the microwave for a further 10 minutes.

Mash the contents of the bowl as much as you can – you should have a fairly thick mix of fruit / margerine / sugar now.

Put the rest of the ingredients into a larger bowl.

Mix to combine.

Add in the wet ingredients and stir until thoroughly combined.

Transfer to a greased baking tin (I use Wilton Cake Release bought in Lakeland) approximately 32 x 24 cm in size.

Sprinkle the top with Granulated Sugar and Flaked Almonds if you wish.

Bake in a 180 degree oven for approximately 30-40 minutes, until firm to the touch.

Slice and serve when cool.
